5 Tips for Smoking Delicious Wagyu Beef Short Ribs

Summer is right around the corner, which calls for cookouts, grilling, and smoked meats. If you love smoked short ribs but can’t get them perfectly juicy and tender, fear not—we have five tips for smoking delicious Wagyu beef short ribs to help you wow your guests with the tastiest short ribs in town. 

Take Your Meat Out of the Fridge Before Cooking

When you’re cooking any meat, the best practice is to take your meat out of the fridge an hour or two prior to cooking it. This way, the meat’s internal temperature will be closer to the cooking temperature before you add it to the smoker, which lessens the cooking time and keeps your meat moist.

Use Dry Rub or Brine

About two hours before cooking or the day before, rub or dry-brine your short ribs with your favorite marinade or half a teaspoon of kosher salt per pound of meat. This will also help your meat retain moisture while it’s in the smoker. 

Smoke Slow & Low

You have heard the quote, “Slow and steady wins the race.” The same goes for smoking short ribs. Slow and low is vital; don’t get too eager. You don’t want to cook at too high of a temperature because it will dry out your meat. Also, be mindful of what’s in your marinade or dry rub; if your rub contains sugar, keep in mind that sugar burns quickly under high temperatures. 

Know the Different Types of Woods

Different woods go well with various meats, so you should also know which wood will pair well with your meat. Woods such as hickory or oak work well with poultry, beef, and pork. Mesquite is a heavier, richer wood that goes nicely with everything if you don’t use too much of it.

Allow Your Meat To Rest

When you’re smoking Wagyu short ribs, the last and most essential step is to allow the meat to rest after cooking it. We know not diving in immediately is hard, but allowing your short ribs to rest will redistribute the juices. Wrap your short ribs in foil and let them sit for about 15 minutes before getting a bite.
